Yeah, the first few days it was steady at 68. It was only after like the 5th day, with this intense heat. Which is odd b/c I've never had this problem before even in the middle of the summer. Getting it too cool i don't think is a problem, unless th…

Most of those off flavors (Esters, Fusels) are created in the first 48 hours. When i brew, I try to keep the temp consistent for the first 2-3 days, then I let the brew temp rise. If I start at 67f-68f, I raise it up to 72f-74f slowly over the next…

it's london ale yeast, which it says shouldn't go above 71, so I may give it some off flavor. But guess we'll see.

How many days has it been fermenting? Likely nothing to worry about. It's not uncommon for brewers to increase the temp a little towards the end, it keeps the yeast active and helps it "clean up" after itself. Check the temp range of the yeast you'…

When I use lemon/orange peel in my brew, I use the zest. This is the thin colored skin around the fruit. You don't want any of the white part of the skin. That is where you get the bitterness from. Also, I don't boil it. I wait until flame out. Onc…

So I'm sitting here while my boil is finishing for a coffee porter and I was thinking about my next brew.  I was thinking about reworking my double white recipe (which some of you had at the meeting last month), was wondering what difference it woul…

Sometimes the sediments on the bottom will "hide" some CO2, and it you "disturb" it even a little, some floaties will come up. Nothing to worry about! Did the bottling go well?
April 22
yeah it's settled down now. I guess it was just sediment. But I've never seen so much get kicked up before with a reading. First time for everything I guess.
