Well that explains it. Lager yeasts do like cooler temperatures. So yes, I'd fement it at the recommended temps.

I don't know what yeast strain you're using, but I feel that 52-58 is usually a bit too cold for most ale yeasts. Usually the mid-upper 60's would be best. Yes temp does effect the time it takes for the beer to ferment, but also the warmer it fermen…

What about temperature?

Hi,

I'm about to join the Homebrew ranks, and English Brown Ale was suggested as a good kit to start with, since I like darker beers. Looking at the kit instructions, they say to ferment "ideally" at 52 - 58 degrees, for about 20 days. Alternately, one can ferment at 66 to 72 degrees for a shorter time of 7 - 10 days.
