This is my recipe for my Saison DuPont Clone. I think it came very close to the original. I brought it to one of the meetings and people seemed to agree.

1.80 oz East Kent Golding Pellet (4.7% Alpha) @ 60 Minutes (Boil) (0.3 oz/Gal)
1.00 oz Styrian Golding Pellet (4.4% Alpha) @ 5 Minutes (Boil) (0.2 oz/Gal)

Misc Bill
----------------
1 tsp PH 5.2 @ 0 Minutes (Mash)
1.00 tab Whirlfloc Tablet @ 10 Minutes (Boil)
1 tsp Yeast Nutrient @ 10 Minutes (Boil)

Single step Infusion at 148°F for 60 Minutes.
Fermented at 85°F - 90°F with Saison DuPont Yeast (Cultured From Bottle)

Aged for 6 months in a Keg before tapping.

CO2 Level was 3 vols

I cultured the yeast from a bottle of Saison DuPont by adding a have bottle of wort to a bottle of Saison DuPont I was drinking that night. I covered with tin foil. Once I saw activity, I knew it was going to work. I then stepped it up twice. Once in a 1000ml starter on a stirplate. Then to a 2000ml starter on a stirplate.

 

I then decanted that second starter and pitched into my recipe above at 70 Degrees. I let it rise up overnight and then hit it with the Thermowrap heater to 85°F.

 

The fermentation was fast and furious, but I let it sit in the fermenter for about 10 days at the high heat. I then brought the temperature down about 5°F a day until I got down about 50°F. I then transfered into a keg, sealed the keg with CO2, and let the keg sit in my basement for 6 months.

 

After 6 months I hooked it up to the Keggerator and carbonated it the rest of the way to 3 vols. The rest is history.
