I must say that I am pleasantly surprised that I have made it through the first round of the 2010 Iron Brew Competition. I have only been making beer since December and basically only one style. Hefeweissen. Any way.... on to my recipe.
5# Briess Bavarian Wheat Dry Malt Extract
2# Wild Flower Honey + 1 1/4 cups
3 Qt Trader Joe's Pomegranate Juice + 2 cups
2 Oz Tettnanger Hops (German Pellets)
1 tsp Irish Moss
WLP 351 Bavarian Weizen Yeast
1 Pkg KreamyX
Carapils in 2 gallons of 170° spring water and hold for 30 minutes. Removed grains and brought wort to boiling. Added DME + 1 oz hops. After 45 minutes added 1/2 oz hops and Irish Moss. After another ten minutes I added the remaining hops and boiled for a final 5 minutes. Removed from heat, brought wort temp down to 80° and added 2# honey when the wort was cooler than 100°. Pitched yeast. SG at this point was 1.061.
After one week, I added 3 qts of pom juice and 1 1/4 cups honey. This raised the SG from 1.028 to 1.038.
After one week (and the kreusen finally fell), I racked into a secondary. SG at 1.016. After another week, I racked into a third carboy and added 2 L water which decreased the SG from 1.008 to 1.007. I waited one day before adding Superkleer.
Three days later I racked into another carboy and added KreamyX (boiled in a cup of water) and 2 cups of Pom juice and bottled.
Final ABV: About 6.5%
The carbonation came out a bit on the heavy side so in the future, I would recommend decreasing the KreamyX or priming sugar by at least an ounce but not more than two. The final product was nice and a wee bit tart. I think the pomegrante came out nicely.
