Hello all,

SO I tried brewing all grain for the first time the last weekend of September. It was a pale ale. When I put it in my Fermentation area (little room in garage, it is to damp in basement) on Saturday, the room was a little warmer then I wanted but another brew I have going (Belgian Triple) was going hard core, and the yeasts had the same Temp. scale. I checked the ale the next day and it was bubbling like a nice little beer should. By Wednesday the little valve was flat, no bubbling no CO2. I thought I'd let it sit, maybe it got a little to warm in there and I would wait for these storms to go through and the temp to drop. Well still nothing, should I move it to the secondary and hope for the best or did I mess it up?

I used an east coast ale yeast, hopefully I didn't leave it out to long or something before pitching.

ECY10 Old  Newark  Ale:  Sourced from a now defunct east coast brewery, this pure strain was identified
as their ale pitching yeast. Good for all styles of American and English
ales. 
 Suggested fermentation temp: 60-68°F.  Apparent attenuation : 68-72% 


The reason I am scared is the Triple is still going, its not bubbling but the valve is still at the top. I know I am not the most experience
brewer but I cannot see the yeast eating all that sugar in 4 days. My OG was in range and the temp is good... I am a little hesitant to pop the top off to look in and take another gravity reading. I can see lots of foam (krausen?) on the sides of the fermenter though so?

Should I just transfer it over?

Hey Trevor,

I've had beers ferment to finish in 5 days, and I've had them take 75 days. I've had beers that fermented with the intensity of an angry volcano, and I've had the mellow ones that created a nice layer of krausen but no explosions.

Airlock bubbling is an indication of fermentation, but not a guarantee. Make sure there is no leak where the CO2 can escape outside of the airlock, though.

The best way to determine for certain if the yeast is working or done working, is to take a hydrometer reading. If you're at your target Final Gravity, then all is good, and it's time to move the beer.

If, however, you're some points off the target, you should let it sit for a few more days, do another reading, and then decide...:
* Gravity has gone down - it's still working, so let it have some more time
* No change in gravity, but you're close to target - consider it done
* No change in gravity, and you're quite a bit off target - the yeast may be stuck

I've had decent luck getting the yeast to "wake up and get back to work" by gently rousing the carboy to get the yeast back into suspension. Note, don't splash, don't do it excessively, and it's not something that'll work forever.

It you cannot get it to drop any more points, you can always add more yeast. Some people prefer to pitch more of the same yeast, while others like to throw in something that ferments fast and neutral. In either case, with the extra yeast, you will want to keep an eye on it so it doesn't dry out too much (gravity goes too low).


So, as a kind of summary...

- the Trippel may be done and is now just "farting CO2" to fool you into thinking there's actual fermentation
- The Pale may be close to finishing, even if there is no activity.

The hydrometer is your friend. And so is StarSan. :)

I was going to add my two cents, but Eivind, you pretty much summed up my thoughts.

Take a sample with a sanitized theif, measure gravity, and after all is said and done, don't forget to bring samples to an ALEiens meeting!! :)

wow where has the time gone? well I guess later is better than never for an update. When I checked on the progress of the beer the gravity looked good (should be a decent % by volume) so I swapped it over to the secondary. Now it is still fermenting, I tasted a bit when I took the gravity reading, it was a different taste then I thought, I didn't get as much hop flavor as I had hoped, but its not an IPA so I can live with it.

Any who, I am not sure if I want to or not but if I wanted to filter it, not sure I will need to, how do I go about doing that?
